I develop recipes for hospitals. I know that sounds pretty boring but this week I was able to push through an indigenous hot smoked salmon recipe we'll smoke on site for 500 patients. And I'm also working on fancy molded plating for puree diet patients. And I started my week cooking at a hospice we run. Ever cook for someone with the passion that this may be their last meal? Literally that. There's about 5 other projects I'm working on including a new hospitals design.
