Most peanut oil is made from moldy, discarded peanuts deemed unfit for sale.
Milling, cutting, or grinding peanuts increases their surface area, making them more susceptible to mold and aflatoxins.
A study done in Turkey tested NINE peanut oil processing plants, and the aflatoxin levels were 13x higher than European safety limits.
Five Guys & Chick-fil-a pose it as a healthier option, but these oils are so chemically refined that they aren't even a peanut allergen, and they have sky-high PUFA.
Stick with tallow, butter, or ghee when possible, but even other seed oils have lower levels of aflatoxins.
