This isn't true, under GDPR. It requires personally identifiable data to be irreversible deleted, both when not needed anymore and on recival of a data deletion request.
And personally identifiable data can't be anonymized ex. an emailadress is in and of itself id-data even when not connected to anything. Same for IP-adress, postal adress, phone numbers, personal names & nicknames etc.

The assholes at Vultr decided to ban me yesterday.
They asked for explanations of what I used my server for and when I said "nostr" they just told me to get the fuck out.
They gave me 12 hours to access my data and migrate all my dozens of relays and services. All while treating me like a fucking criminal.
I searched for an AI to help me migrate all my stuff and found this Warp tool that is pretty damn good.
It came up with a single one linger to deploy my strfry instances, do strfry db migration, configure HTTP server, everything! I can even tell it "hey, setup blossom on blossom.f7z.io and only allow my pubkey to upload stuff"
Damn fucking wild.
A lifetime ago, I used to be a sysops at a hosting company. Migrating this much stuff would have taken me about a week of fighting old package versions, database migrations, updating configurations.
Now I literally gave root access to an LLM to help me out and it literally did it extremely well. The setup it accomplished is already better than my very ad-hoc deployment I had in my previous server.

However a very high bandwidth anonymising network seems not very plausible today.
That relays can be paid and incentivized with high levels of privacy is very helpful but doesn't solve the above.

I don't think it's useful to argue by redefining terms. Money is what most people consider money. It's emergent from how we interact in society and also from how we use language.
There might be an older concept of money where bank balances are not considered money.
It's similar to how inflation is now rise in prices. Even linguistically, it's nonsense, monetary base can inflate, but prices rise, but don't inflate. But everyone uses the new term and because language is (among other things) tool for communication, the best use is in the way other people understand words.
This goes beyond economics.
