Don't know if this is useful for anyone, but I made a very simple macOS Shortcut to toggle Night Shift via ctrl+opt+n: https://www.icloud.com/shortcuts/0b924b88340641608e6fbc92d0b0b6f4
Of course you can customize the Shortcut once imported, change the keyboard shortcut or even attach it to the menubar or Dock, if you prefer.
I have set Night Shift to always be on to reduce the amount of blue light exposure but I don’t want to fiddle with Systems Settings when I’m working outside and the display is difficult to see because of glare from the sun.
