🍖 BACON FAT AIOLI (The Dip of the Gods)
📜 Ingredients:
* 1 egg yolk (pasture-raised, so fresh it’s still warm)
* 1 tbsp lemon juice (or fermented apple cider vinegar for gut power)
* 1 garlic clove (smashed to paste with Himalayan salt)
* 1 tsp Dijon mustard (or homemade fermented mustard if you’re extra)
* 100ml bacon fat (rendered, warm but not hot)
* 30ml tallow or olive oil (to balance flavor)
* Salt + smoked paprika (to taste)
⚔️ Method:
1. Emulsify the Base:
* Whisk yolk, lemon juice, garlic, mustard in a copper bowl (or glass).
* Drizzle in tallow/olive oil first (slowly!) until thick.
2. Bacon Fat Blitz:
* Once base is stable, drizzle in warm bacon fat while whisking like a Viking churning butter.
