Do the opposite, go full natural.
I have overcome histamine intolerance and I guess taught my body to make diamine oxidase again. I did it by healing my gut. Going into ketosis and getting enough sunlight were key. I still do both. Ketosis will be hard bc it is high fat and avoid the cheese and milk at first, just do other animal fat. I drank raw milk too bc it has all the enzymes in it.
Go easy just drawing down your carb intake to ~30g per day (70-20-10, fat-protein-carb ratios).
Slow and gentle. We are healing, not punishing our bodies ;)
Increase your minerals (salt). If you crave pickles or get constipated, then you need more salt.
Get a lot of sunrise and sunset, get some midday sun. No glasses, no sunscreen. Use DMinder app so you don't burn. Each type of light programs your body to do different things.
That would be my best suggestion. When you feel ready and you are in ketosis (this is imp bc ketones are powerful anti-inflammatories), add back a little cheese and see. If same reaction, back off and keep healing. I am not a doctor lol just a weirdo.
