I did a bit of digging (haha), and it seems you can go for quick growers (beans, lettuce), root crops (beets, potatoes, carrots, parsnips), and other cold hardy vegetables like spinach, chard, cabbage, kohlrabi, pak choi, cauliflower etc. Reasonable variety, if a a bit heavy on the brassicas.
