I do a lot of home cooking and don't use recipes for the majority of our meals. most cooking is done on intuition and general knowledge (mother sauces, temps for doneness, salt vs acid, wet/dry cooking methods, etc)
For recipes where amounts and timing is specified, I hand write them in a small journal to reference later. Sometimes they are copied from something found on the internet but often times they have my own modifications. Writing by hand doesn't take much time and it helps with memory.
