## Chef's notes
This is a staple in my household, easy enough to make with moderate prep work.
A spin on the traditional British version of the recipe that involves baking the meal in homemade BBQ sauce.
There is room for experimentation here (is 2x garlic cloves ever enough?), and portion sizes are easily adjusted for different size cooking containers or larger parties.
I use a ceramic casserole/baking dish with no lid, but any oven-proof dish will work.
The cola needed is personal preference, I use Coke Zero or Pepsi Max as that is generally what is in the house anyway.

## Ingredients
- 1x 330ml (12 fl. oz) can of cola
- 2x red bell peppers, deseeded and roughly chopped
- 2x garlic cloves
- 2x chicken stock/bouillon cubes
- 250g passata
- 1x tbsp dark soy sauce
- 1x tbsp Worcestershire sauce
- 1x tbsp balsamic vinegar
- 8x bacon rashers
- 4x skinless, boneless chicken breasts
## Directions
1. Pour the cola into a medium-size non-stick saucepan over a high heat, bring to the boil and cook until reduced by half. This can be adjusted for thicker or thinner sauces, allow time accordingly.
2. Preheat the oven to 200°C/390°F
3. Add the red peppers, garlic, stock cube, passata, soy sauce, Worcestershire sauce, balsamic vinegar and 150ml (5fl. oz) boiling water to the cola.
4. Reduce the heat to medium and bring to a simmer, then cook for 10 minutes or until the peppers are soft, adding a little extra water if needed.
5. Remove pan from heat and blend until smooth using a stick blender or food processor.
6. Wrap the bacon around the chicken breasts and place in an ovenproof dish. Pour the sauce all over the chicken and roast for 20-25 minutes or until the chicken is cooked through.
7. (Optional) Add grated cheese on top and grill/broil until melted
8. Serve with sides of your choice, this meal goes well with almost anything
