usually I "freestyle" in the kitchen:) so I hope I can still remember everything... Ingredients: fresh broccoli, carrots, onion, garlic, can of coconut milk, can of tomatoes (or fresh tomatoes) + chicken (of course meat is not part of the ayurvedic diet:). Spices: curry, sweet paprika, hot paprika, salt, cumin, turmeric, bay leaf, about 150 ml (glass) of vegetable broth, 100 grams of quinoa. First, in a big pot I fry the spices in coconut oil (or ghee butter) with onion and garlic. then I add sliced carrots and veggie broth + quinoa. cook for 10 minutes then I add broccoli, tomatoes and coconut milk. Separately, I fry chicken seasoned in salt, curry and turmeric and add it to the pot with curry. on a dry pan I fry the cashew nuts and add them on the top when I serve the dish. Enjoy!
