Why the switch?
When it comes to Nostr stuff, iOS is always going to get the short end of the stick due to Apple not liking zaps. Not if they aren't getting a cut out of it, at any rate.
This means most new stuff is going to come to Android first, because development there is much more open. Getting approval to put the app into the Play Store is optional here, and even with that, Google has been much more lenient than Apple about what they will allow.
There also is not currently a signing app available on iOS, so you will need to give each client your nsec, unless they allow you to sign in with NIP-46 via nsec.app or something. Good luck getting that to work smoothly, since iOS kills background processes and you will need to keep the web browser with nsec.app running for signing to work properly.
In short, moving to iOS is likely to severely hamstring your Nostr experience.
