If I had the money to invest, I would sell toasted sandwiches, cheap toasted sandwiches, and coffee. Hot soup in winter.

In my town there it would be extremely popular.
There is no where to buy cheap ready to eat food, only overpriced cafes and restaurants.
I would find one other person to help run it.
Stay open late on Friday Saturday for all the drunkards (literally no where for blind drunk people at night to buy food, I think it would also help reduce a lot of the alcohol fuelled violence if those people had food to eat)
