My first instinct was to go to the MSDS for Evapo-rust, to see if I could figure out what it's doing to remove rust. However, the active ingredient is not published (it's "Proprietary ingredient," 10-20% of the product). There are a couple of guesses as to what's in it on Reddit (https://www.reddit.com/r/homechemistry/comments/sjcm75/anyone_ever_test_whats_in_evaporust/), though.
The MSDS and that thread both mention sulphur compounds, but most iron sulphides aren't yellow-white. (Lots of sulphur compounds are, tho.)
