BIOENERGETIC COFFEE-MALLOW RECIPE
INGREDIENTS:
- 50g of beef gelatin
- 150g of sugar, honey, or maple syrup
- 3 teaspoons of instant coffee
- a pinch or two of salt
- coconut oil (for greasing)
INSTRUCTIONS:
1) Pour 50g of gelatin and 1/2 cup of water into a bowl. Whisk for about 30 seconds and set aside to bloom.
2) Add 150g of sugar, 3 teaspoons of instant coffee, a pinch or two of salt, and 1/2 cup of water into a small pot.
3) Set the pot on the stove and turn the heat to medium. Mix every minute or so to avoid burning and turn the heat off once the sugar mixture is steaming.
4) Rip the bloomed gelatin into small pieces to prevent the electric whisker from making a gigantic mess of your kitchen.
5) Pour 1/3 of the sugar mixture into the bloomed gelatin bowl and mash everything together with the electric whisker.
6) Turn the electric whisker to low and keep whisking until the bloomed gelatin and sugar mixture are homogenous (about one minute).
7) Turn the electric whisk to high and slowly add the remainder of the sugar mixture. Keep whisking until the mix is about tripled in size and finished (you'll know when it's done).
*You can eat now if you'd like.
8) Pour the marshmallow mixture into a coconut oil greased tupperware ASAP (you don't want the mix to harden in the bowl).
9) Place the tupperware into the fridge and let the marshmallows set for at least 2 hours. Once that's done, all you need to do is cut.
