How to make a sourdough starter for żurek :
I use boiled and completely cooled water, and I recommend using this. Pour the water into a large, clean jar. Add rye flour type 2000 to the water, as well as peeled garlic cloves, bay leaves and allspice. Stir everything together and cover with gauze. Do not close the jar, because the starter needs air to work. It is also worth helping with a rubber band. Put the jar in a shady but relatively warm place. It can stand somewhere in the kitchen.
Stir the starter at least once a day. Always use a clean spoon or a clean wooden stick. After 3-4 days, the starter will smell nice. After 7-8 days, it will be ready to use.
500 ml boiled water
6 tablespoons of rye flour type 2000 - up to 100 g
5 cloves of garlic - about 25 g
4 bay leaves
10 grains of allspice
