You asked if the security model is improved with seed words...
Storing your seed words, even if encrypted, on your computer was never a great idea.
Seed words allow us to handle large numbers with our hands, minds, outside of a computer. This means that we no longer need electronic devices to manage the transfer of this number without typos.
Subtle but powerful.
The holy grail would be to create a private key offline and never expose it to a computer ever, but we kinda need a computer to so the maths to create our addresses and to sign transactions.
The invention of seed words helped us build two tier security systems (hardware wallets) to mitigate the risk associated with keeping your keys hot when this was not possible before.
On top of this, the invention of HD Wallets preceded this technology and paved a way for one private seed to represent many bitcoin addresses instead of just one. This also improved security because it means we are more likely to generate new addresses every time we want to deposit if we don't need to back up something new every time we use a new one.
